Jamaican Jerk Chicken

Ingredients

  • 4 boneless skinless chicken breast
  • 1 small onion
  • 1-3 jalapeno pepper, to taste
  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • Juice of 1 lime
  • 1 tsp honey
  • 2 cloves garlic, minced
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp allspice
  • 1/2 tsp red pepper flakes
  • small bunch of fresh cilantro
  • Salt & Pepper

Directions

  1. Put all of the ingredients, except the chicken breast, in a blender and blend until smooth
  2. Let the chicken marinate ine the mixture for several hours, or overnight
  3. Best cooked on a charcoal or gas grill. In a pinch, medium heat in a saute pan will do.
  4. Remove the chicken from the marinade and grill or saute until cooked through. While the chicken is cooking, place the remaining marinade in a small saucepan and bring to a boil. Simmer for 5 minutes.
  5. When the chicken is cooked, allow to rest for 5 minutes. Before serving brush the chicken with the remaining glaze. Serve with your favorite seasonal vegetables.
