German Potato Salad

Ingredients

  • 2 lbs potatoes
  • 8 slices bacon, chopped
  • 1 small red onion, diced
  • 1/4 cup apple cider vinegar
  • 1/2 cup broth
  • 1 tbsp dijon mustard
  • 1 tsp sugar

Directions

  1. Boil Potatoes: Cook whole, unpeeled potatoes in salted water until fork-tender. Drain, peel while warm, and cut into bite sized chunks.
  2. Fry Bacon: In a large skillet, fry bacon until crisp. Remove the bacon but keep the rendered fat in the pan.
  3. Sauté & Simmer: Sauté the onion in the bacon fat until soft. Whisk in the vinegar, broth, mustard, and sugar. Bring to a simmer.
  4. Combine: Toss the warm potatoes and bacon in the skillet with the dressing. Let it sit for 5–10 minutes so the potatoes absorb the liquid. Serve warm.
  5. Optional: Garnish with chopped green onion.
