German Potato Salad

Ingredients
- 2 lbs potatoes
- 8 slices bacon, chopped
- 1 small red onion, diced
- 1/4 cup apple cider vinegar
- 1/2 cup broth
- 1 tbsp dijon mustard
- 1 tsp sugar
Directions
- Boil Potatoes: Cook whole, unpeeled potatoes in salted water until fork-tender. Drain, peel while warm, and cut into bite sized chunks.
- Fry Bacon: In a large skillet, fry bacon until crisp. Remove the bacon but keep the rendered fat in the pan.
- Sauté & Simmer: Sauté the onion in the bacon fat until soft. Whisk in the vinegar, broth, mustard, and sugar. Bring to a simmer.
- Combine: Toss the warm potatoes and bacon in the skillet with the dressing. Let it sit for 5–10 minutes so the potatoes absorb the liquid. Serve warm.
- Optional: Garnish with chopped green onion.
